Serves 2

  • 2  Salmon Steaks
  • 2 Baby leeks (finely sliced)
  • 2 Lemon slices
  • 2 tsp. Lemon juice
  • 100ml. (3 fl. oz.)   Homemade or yeast-free fish/veg stock
  • 4 Sprigs of fresh dill/fennel
  • Lemon slices and dill/fennel sprigs to garnish


Place leeks and 4 herb sprigs into pan and add the 2 lemon slices. Lay the salmon on top. Mix lemon juice with stock of choice and pour over the fish then reduce to a simmer and poach the fish uncovered for about 6 – 7 minutes. Lift the fish out of the pan and allow to drain and then place on a plate and garnish with the lemon slices and sprigs of dill or fennel.
