Serves 4

  • 4  Free range Eggs
  • 1 Larger ripe Avocado
  • 3 tsp.  Natural unsweetened yoghurt
  • ½ tbsp. Tomato puree (No citric acid)
  • 1 tsp Lime juice
  • 4 tbsp. Chopped Cilantro
  • Small bunch of Chopper Chives
  • ½ tbsp. Paprika
  • Pea shoots for garnish


Remove the flesh from the avocado mash with a fork then gently blend together with yoghurt, tomato puree and chopped Cilantro, Paprika and Lime juice. Spoon the Avacado on top of the toasted rye bread.

Poach the eggs in a shallow pan of water with a little cider vinegar for 3-4 mins. Carefully remove, drain off excess water with kitchen paper and place on top of the avocado.

Dress with peas shoots, chives and black pepper.
